Ingredients
2 tablespoons peanut oil
3 green onions, sliced
2 cloves garlic, minced
1 large carrot, peeled and chopped
½ red bell pepper, chopped
½ green bell pepper, chopped
1 cup frozen green peas
3 cups cooked quinoa, cooled
3 tablespoons low sodium tamari
2 teaspoons sesame oil
Directions
Heat the peanut oil in a medium-large skillet over medium heat.
Add the sliced green onions and minced garlic to the hot oil. Cook for 2 minutes, stirring occasionally, until the green onions begin to soften and release their aroma.
Add the chopped carrot, red bell pepper, green bell pepper, and frozen peas to the skillet. Stir frequently and cook for 3 minutes until the vegetables become tender-crisp.
Stir in the cooled cooked quinoa, breaking up any clumps. Drizzle the tamari and sesame oil over the mixture.
Continue cooking and stirring for 1 to 2 minutes until the quinoa is heated through and all ingredients are well combined. Serve hot.
