Ingredients

1 Juice of 1 lemon

1 clove garlic, grated

1 teaspoon paprika

1 teaspoon fresh thyme

3 tablespoons extra-virgin olive oil

Kosher salt to taste

1 pound large shrimp (about 24), peeled and deveined, tails intact

12 slices bacon, halved

Directions

  1. Position a broiler rack 3 to 4 inches from the heat element and preheat the broiler to high. In a shallow baking dish, combine the lemon juice, grated garlic, paprika, fresh thyme, olive oil, and 1/2 teaspoon kosher salt. Whisk these ingredients together until well combined.

  2. Add the peeled and deveined shrimp to the marinade and toss gently to coat all pieces evenly. Cover the dish and refrigerate for 20 minutes, allowing the flavors to infuse into the shrimp.

  3. Remove the dish from the refrigerator and gently turn the shrimp over in the marinade to ensure they are well coated. One at a time, remove each shrimp from the marinade and wrap it snugly with a piece of bacon, securing with a toothpick if needed to keep the bacon in place.

  4. Arrange the bacon-wrapped shrimp seam-side down on a baking sheet. Spoon any remaining marinade over the top of the shrimp.

  5. Broil the shrimp for about 5 minutes, turning them halfway through cooking, until the bacon is slightly crisp and the shrimp have turned opaque and firm, indicating they are cooked through to a safe internal temperature of 145°F. Serve immediately.
