Ingredients

4 boneless pork loin chops

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 tablespoon butter

1 large red onion, sliced

2 tablespoons sherry vinegar

1 cup applesauce

Directions

  1. Pat the pork chops dry with paper towels. Season both sides evenly with salt and black pepper.

  2. Heat the butter in a large skillet over medium-high heat until it foams and begins to brown at the edges, about 1 minute.

  3. Place the seasoned pork chops in the hot skillet and cook for 5-6 minutes on the first side until golden brown. Flip and cook for another 5-6 minutes on the second side until the internal temperature reaches 145°F. Transfer the cooked chops to a warm plate and tent with foil.

  4. In the same skillet, add the sliced red onion and sauté over medium heat for 8-10 minutes, stirring occasionally, until the onion becomes deeply golden and caramelized.

  5. Pour the sherry vinegar into the skillet with the caramelized onion and stir for 30 seconds to deglaze, scraping up any browned bits from the bottom.

  6. Stir in the applesauce and mix gently until well combined. Warm through for 1-2 minutes on medium heat.

  7. Divide the pork chops among four serving plates and top each with a generous portion of the warm onion and apple compote. Serve immediately.
