Watermelon Feta Salad with Mint

Ingredients
1/2 cup red onion, finely chopped
1/2 cup fresh lime juice (from 4 to 6 limes)
8 cups watermelon, cut into 1-inch cubes with seeds removed
1/2 cup crumbled feta cheese
1/4 cup fresh mint leaves, thinly sliced
1/2 cup fresh parsley leaves, chopped
Directions
Place the chopped red onion in a small bowl and pour the lime juice over it. Let the onion marinate for 5 minutes to soften slightly and mellow its sharp flavor.
Cut the watermelon into 1-inch cubes, removing any black seeds as you go. Transfer the cubes to a large serving bowl.
Pour the lime juice and marinated red onion over the watermelon cubes, including all the liquid.
Add the crumbled feta cheese to the bowl and gently toss to combine.
Just before serving, scatter the sliced mint and chopped parsley over the top and gently fold them into the salad to distribute evenly.
Serve immediately while the salad is chilled and the flavors are fresh.
