Ingredients
1 cup unsalted butter
2 cups chocolate chips
2 ¼ cups granulated sugar
4 large eggs, cold
1 tablespoon pure vanilla extract
1 ¼ cups Dutch-process cocoa powder
1 teaspoon espresso powder
1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
Directions
Preheat your oven to 350°F. Lightly grease the bottom and sides of a 9×13-inch baking dish with butter or cooking spray.
In a medium saucepan over low heat, melt the butter and chocolate chips together, stirring frequently until completely smooth. Remove from heat and let cool slightly.
In a large bowl, whisk together the sugar and cold eggs until well combined and slightly lightened in color, about 1–2 minutes.
Stir the vanilla extract into the egg mixture, then add the cooled chocolate-butter mixture and fold together until fully incorporated.
In a separate bowl, whisk together the cocoa powder, espresso powder, flour, baking powder, and salt.
Gently fold the dry ingredients into the chocolate mixture until just combined—do not overmix. The batter should be thick and fudgy.
Pour the batter into the prepared baking dish, spreading it evenly to the corners.
Bake for 30–35 minutes, until a toothpick inserted near the center comes out with a few moist crumbs (slightly underbaked for fudgier brownies). The top should appear set but may still jiggle slightly when gently shaken.
Remove from the oven and let cool in the pan for at least 15–20 minutes before cutting into 20 squares. For cleaner cuts, cool completely and refrigerate for 30 minutes before serving.
