Ingredients
1/2 cup all-purpose flour
1 cup cornmeal
1 cup buttermilk
1 large egg
4 large tomatillos, husked and cleaned
Vegetable oil for frying
Kosher salt to taste
1/2 teaspoon smoked paprika
1/4 teaspoon chipotle chile powder, optional
8 ounces plain Greek yogurt
1/4 cup spicy guacamole
2 tablespoons chipotle red sauce
2 tablespoons fresh minced cilantro, plus more for serving
1/2 lime, juiced
Directions
Remove the papery husks from the tomatillos and rinse them under cool water to remove any sticky residue. Pat dry with paper towels.
Slice the tomatillos lengthwise into 1/4-inch-thick slices. Discard the ends if they are very thin.
In a shallow bowl, whisk together the buttermilk and egg until well combined.
In another shallow bowl, combine the cornmeal and all-purpose flour. Season generously with kosher salt and a pinch of smoked paprika, then stir to mix evenly.
Dip each tomatillo slice into the buttermilk mixture, allowing excess to drip off, then dredge both sides in the cornmeal-flour mixture. Place on a plate and repeat with remaining slices.
Pour vegetable oil into a large skillet to a depth of about 1/4 inch and heat over medium-high heat until shimmering, about 3-4 minutes.
Carefully place coated tomatillo slices into the hot oil, working in batches to avoid crowding the pan. Fry for 2-3 minutes on the first side until the coating is golden brown, then flip and fry the other side for another 2-3 minutes until golden and crispy.
Transfer the fried tomatillo slices to a wire rack set over a baking sheet to drain excess oil. Repeat with remaining slices, adding more oil to the pan as needed.
While the tomatillos are frying, prepare the sauce: In a small bowl, combine the Greek yogurt, guacamole, chipotle red sauce, fresh minced cilantro, lime juice, smoked paprika, and chipotle chile powder if using. Stir until smooth and well blended. Taste and adjust seasoning with kosher salt as desired. Refrigerate until ready to serve.
Serve the hot fried tomatillos immediately with the chipotle-yogurt sauce on the side. Garnish with additional fresh cilantro and smoked paprika if desired.
