1 pound boneless, skinless chicken breasts and thighs, cut into 2-inch pieces

1 medium yellow onion, diced
1 leek (white and light green parts), sliced into half-moons and rinsed thoroughly
4 medium carrots, peeled and cut into 1-inch pieces
1 green bell pepper, diced
1 cup dry white wine
4 cups chicken broth
Kosher salt to taste
Freshly ground black pepper to taste
Directions
Heat the olive oil in a large pot or Dutch oven over medium-high heat. Once shimmering, add the chicken pieces and sear on all sides until lightly golden, about 5-6 minutes total. Season with salt and pepper as they cook. Transfer the chicken to a plate.
In the same pot, add the diced onion and cook for 2 minutes, stirring occasionally, until it begins to soften. Add the sliced leek and cook for another 2 minutes.
Add the carrot and bell pepper pieces to the pot and stir well, cooking for 3 minutes to allow the vegetables to start releasing their flavors.
Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom with a wooden spoon. Let the wine simmer for 2 minutes to reduce slightly and cook off some of the alcohol.
Return the seared chicken pieces to the pot and add the chicken broth. Stir to combine, then bring to a boil.
Reduce the heat to low, partially cover the pot, and simmer for 25-30 minutes, until the chicken reaches an internal temperature of 165°F and the vegetables are tender. Skim off any foam or impurities that rise to the surface during cooking.
Taste the stew and adjust seasoning with additional kosher salt and freshly ground black pepper as desired. Serve hot in bowls, ensuring each portion has chicken, vegetables, and broth.
