¼ cup Dutch-processed baking cocoa

1 tsp Baking soda

1 tsp Baking powder

½ tsp Salt

1 cup Buttermilk

⅓ cup Canola oil

1 Egg

1 tsp White vinegar

1 tsp Vanilla extract

½ cup Mini semi-sweet chocolate chips

Directions

  1. Preheat your oven to 350°F (175°C).

  2. Prepare an 8 x 8 inch baking pan by lightly greasing it with oil or butter, or line the bottom and sides with parchment paper for easy removal.

  3. In a large mixing bowl, whisk together the flour, brown sugar, cocoa powder, baking soda, baking powder, and salt until evenly combined.

  4. In a separate bowl, whisk together the buttermilk, canola oil, egg, vinegar, and vanilla extract until well blended.

  5. Pour the wet ingredient mixture into the dry ingredients and gently stir just until no flour streaks remain. Do not overmix; the batter should be thick and uniform.

  6. Pour the batter into your prepared pan, smoothing the surface lightly with a spatula.

  7. Sprinkle the mini chocolate chips evenly over the top of the batter.
