8 ounces feta cheese, crumbled
2 ounces mascarpone cheese
1 tablespoon olive oil
1 teaspoon fresh lemon zest
3 tablespoons fresh chopped parsley
1 pound ground sirloin
1 tablespoon minced red onion
¾ teaspoon kosher salt
¼ teaspoon dried oregano
¼ teaspoon red pepper flakes
1 clove garlic, minced
1 teaspoon Dijon mustard
½ teaspoon Worcestershire sauce
4 hamburger buns, toasted
½ cup roasted red peppers, sliced
Directions
Combine the crumbled feta, mascarpone, and olive oil in a food processor. Pulse and process until smooth and fluffy, about 2 to 3 minutes, pausing to scrape down the bowl as needed.
Add the lemon zest and 3 tablespoons of fresh parsley to the food processor and pulse until the herbs are fully incorporated into the feta mixture. Transfer the whipped feta to a serving bowl and set aside.
In a medium bowl, combine the ground sirloin, minced red onion, salt, dried oregano, red pepper flakes, minced garlic, Dijon mustard, and Worcestershire sauce. Gently fold the mixture together with your hands until just combined—avoid overmixing, which can make the burgers tough.
Divide the meat mixture into four equal portions and gently shape each into a patty about ¾ inch thick. Make a small indent in the center of each patty with your thumb to prevent bulging during cooking.
Preheat your grill to medium-high heat. Once hot, place the burgers on the grate and cook for 3 to 4 minutes on the first side without moving them. Flip once and cook for another 3 to 4 minutes until the internal temperature reaches 160°F for food safety.
Place each cooked burger patty on a toasted bun. Top generously with whipped feta, several slices of roasted red peppers, and a garnish of fresh parsley. Serve immediately while hot.
