Ingredients

4 skin-on chicken breasts, bone-in

1 lemon, juiced and zested

1 tablespoon clear honey

1 tablespoon olive oil

2 garlic cloves, minced

1 teaspoon dried oregano

New potatoes, for serving

Green salad, for serving

Directions

  1. Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels and arrange them skin-side up in a shallow roasting dish, leaving space between each piece.

  2. In a small saucepan or microwave-safe bowl, combine the lemon juice, lemon zest, honey, olive oil, minced garlic, and dried oregano. Warm gently for about 1 minute, stirring to ensure the honey dissolves and all ingredients blend together.

  3. Pour the warm lemon-honey mixture over the chicken breasts, ensuring the skin is well coated.

  4. Place the roasting dish in the preheated oven and roast for 30–40 minutes. Every 10 minutes, use a spoon or turkey baster to baste the chicken with the pan juices, spooning the liquid over the skin to encourage an even, glossy coating.

  5. The chicken is done when the thickest part of the breast, near the thigh, reaches an internal temperature of 165°F (74°C). The skin should be golden brown and the pan juices should have thickened slightly into a light glaze.

  6. Remove the chicken from the oven and let it rest in the dish for 5 minutes before serving. This allows the juices to redistribute and keeps the meat moist.

  7. Serve the chicken with new potatoes and a fresh green salad. Spoon any remaining pan juices over the chicken as a finishing sauce.
