Ingredients

2 large sweet potatoes, unpeeled

2 tablespoons non-fat plain yogurt

1 tablespoon pure maple syrup

1 tablespoon fresh-squeezed or bottled orange juice

Directions

  1. Rinse the sweet potatoes under cold running water and pat dry. Using a fork, pierce the skin of each potato several times to allow steam to escape during cooking.

  2. Place both potatoes on a microwave-safe plate. Microwave on high power for 3 to 4 minutes, checking for doneness by piercing the thickest part with a sharp knife—the knife should slide through easily. If needed, continue microwaving in 30-second intervals.

  3. Once the potatoes are soft and cooked through, carefully cut them in half lengthwise and use a spoon to scoop out the warm pulp into a medium bowl, leaving the skins behind.

  4. Mash the sweet potato pulp with a fork or potato masher until smooth or to your preferred consistency.

  5. Add the yogurt, maple syrup, and orange juice to the mashed sweet potatoes. Stir well until all ingredients are evenly combined and the mixture is creamy.

  6. Transfer the mixture to a microwave-safe serving bowl. Microwave on high for 1 to 2 minutes, stirring once halfway through, until the dish is heated through and steaming. Serve warm.
