Ingredients

1 cup coconut water

2 tablespoons granulated sugar

1 large cucumber

2 medium limes

Directions

  1. Pour the coconut water into a saucepan and add the granulated sugar. Heat over low-to-medium heat, stirring frequently, until the sugar dissolves completely. Remove from heat and let cool to room temperature.

  2. While the coconut water cools, wash the limes and squeeze them to extract their juice. Peel and chop the cucumber into chunks.

  3. Once the sweetened coconut water has cooled, transfer it to a blender along with the cucumber chunks and lime juice. Blend on high speed until the cucumber is completely pureed and the mixture is smooth.

  4. Pour the blended mixture through a fine-mesh strainer to remove any pulp or fibrous pieces, pressing gently with a spoon to extract all the liquid.

  5. Carefully pour the strained liquid into ice pop molds, filling each mold to just below the top. Insert sticks if using traditional molds, or follow your mold's instructions. Freeze for at least 6 hours, preferably overnight, until completely solid.

  6. To remove the ice pops, run warm water briefly over the outside of the molds or let them sit at room temperature for 1-2 minutes before pushing the pops out. Serve immediately and enjoy.
