Smoked Ham Hocks with Lima Beans

Ingredients
1/2 medium onion
2 cloves garlic
2 smoked ham hocks
8 cups water
1 pound frozen lima beans
1/2 teaspoon ground black pepper
Directions
Peel the onion, rinse it under cold water, and chop into bite-sized pieces.
Peel the garlic cloves and mince them finely.
Place the smoked ham hocks and water in a large pot and bring to a boil over high heat.
Reduce the heat to low and allow the mixture to simmer gently.
Add the chopped onion and minced garlic to the pot, stirring to combine.
Cover the pot and continue simmering until the ham meat is very tender, about 30 to 40 minutes. Check that the internal temperature of the meat registers 145°F on a meat thermometer.
Using tongs, carefully transfer the ham hocks to a clean cutting board and allow them to cool until comfortable to handle.
Add the frozen lima beans to the pot and cook according to the package directions, usually 10 to 15 minutes.
Once the ham hocks have cooled, remove the meat from the bones, shredding it with your fingers or two forks. Discard the bones and any excess fat.
Return the shredded ham meat to the pot with the lima beans and broth.
Stir in the ground black pepper and adjust seasoning to taste. Serve hot in bowls.
