Ingredients

8 slices thick-cut smoked bacon, 8 slices

2 medium onions, 2 medium, finely chopped

1 cup dark brown sugar, 1 cup packed

1 teaspoon dry mustard powder, 1 teaspoon

1 teaspoon salt, 1 teaspoon

½ cup apple cider vinegar, 1/2 cup

16 oz can canned lima beans (drained), 16 oz can

16 oz can canned black beans (drained), 16 oz can

16 oz can canned pinto beans (drained), 16 oz can

16 oz can canned dark red kidney beans (drained), 16 oz can

16 oz can canned pork and beans in tomato sauce, 16 oz can

Directions

  1. Preheat your oven to 325°F. Arrange the bacon slices on a large baking sheet and bake for 12–15 minutes until crispy. Remove and set aside to cool slightly, then chop into bite-sized pieces.

  2. In a large skillet over medium heat, sauté the chopped onions in the bacon fat until golden and softened, about 5–7 minutes. Stir occasionally to prevent sticking.

  3. In a large bowl, whisk together the brown sugar, mustard powder, salt, and apple cider vinegar until well combined and the sugar dissolves.

  4. Drain and rinse the lima beans, black beans, pinto beans, and kidney beans. Add all drained beans along with the pork and beans (including its sauce) to the bowl with the sugar mixture.

  5. Stir the sautéed onions and chopped bacon into the bean mixture until evenly combined.

  6. Transfer the entire mixture to a 9×13-inch baking dish. Cover with aluminum foil and bake for 50–60 minutes, stirring gently halfway through, until the beans are heated through and the flavors have melded.

  7. Remove from the oven and let rest for 5 minutes before serving. The finished dish should be warm, fragrant, and well-combined.

All ingredients are standard supermarket staples available at every major Charlotte chain—bacon, canned beans, onion, brown sugar, mustard powder, vinegar, and salt require no special shopping. The actual cost per serving lands around $1.50–$2.00, driven by bacon and the five types of beans, which is economical for a side dish that feeds eight. The 75-minute stated time is honest if the beans arrive pre-cooked and canned, though active hands-on time is under 15 minutes; it's a low-maintenance oven dish that doesn't demand constant attention. This is a classic crowd-pleaser that reheats beautifully and fits Southern tradition perfectly, though it's a secondary dish rather than a main and works best as part of a larger meal.
