Grandma's Potato Latkes

Crispy golden potato pancakes made with grated potatoes, onion, and eggs, bound together with matzo meal and fried until perfectly golden. A traditional Jewish dish that's wonderfully savory and satisfying as an appetizer or side dish.

Ingredients
6 large potatoes, peeled and finely grated
1 small onion, grated
3 eggs, well beaten
6 tablespoons matzo meal
1½ teaspoons salt
½ teaspoon black pepper
cooking oil for frying
Directions
Peel the potatoes and grate them finely into a large bowl. Grate the onion and add it to the potatoes. Stir well to combine.
In a separate bowl, beat the eggs until well combined, then pour them into the potato mixture.
Add the matzo meal, salt, and black pepper to the potato and egg mixture. Stir everything together until you have a cohesive batter with no dry streaks.
Heat about ¼ inch of cooking oil in a large skillet over medium-high heat until shimmering and hot, about 1-2 minutes.
Using a spoon or small ice cream scoop, drop heaping tablespoon-sized portions of the potato batter into the hot oil. Gently flatten each mound with the back of a spatula to form thin patties about ¼ inch thick.
Fry the latkes for 3-4 minutes on the first side until golden brown and crispy. Then flip each one and fry for another 2-3 minutes on the second side until golden brown.
Transfer the finished latkes to a plate lined with paper towels to drain excess oil. Serve warm.
