Blueberry French Toast Bake

Ingredients
Non-stick cooking spray
1 loaf blueberry swirl bread (or any bread such as brioche or sourdough), cut into 1-inch cubes
4 large eggs
2 cups whole milk
2 tablespoons granulated sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1 cup fresh blueberries
Directions
Lightly coat a 9×13-inch baking dish with non-stick cooking spray and set aside.
Cut the blueberry swirl bread into 1-inch cubes, removing any large outer crusts if desired. You should have approximately 8 cups of bread cubes.
In a large mixing bowl, whisk together the eggs, milk, vanilla extract, granulated sugar, and ground cinnamon until well combined and smooth.
Spread about half of the bread cubes (roughly 4 cups) evenly across the bottom of the prepared baking dish.
Scatter about ½ cup of fresh blueberries over the bottom layer of bread cubes.
Pour half of the egg mixture evenly over the bread and blueberries, allowing it to soak in briefly.
Layer the remaining bread cubes on top, then scatter the remaining ½ cup of blueberries over the second bread layer.
Pour the remaining egg mixture evenly over the top layer. Cover the baking dish tightly with plastic wrap, then gently press down on the entire surface so the bread absorbs the custard mixture. Refrigerate for at least 3 hours, or preferably overnight.
When ready to bake, preheat your oven to 350°F (175°C).
Remove the baking dish from the refrigerator and uncover it. Let it sit at room temperature for 10–15 minutes before baking if it has been chilled overnight.
Bake uncovered for 35–45 minutes, until the top is golden brown, the bread is puffed up, and a knife inserted in the center comes out clean, indicating the custard is fully set.
Remove from the oven and let cool for 5 minutes. Serve warm, optionally topped with additional fresh blueberries, powdered sugar, or pure maple syrup.
