Ingredients

4 slices thick-cut bacon, diced into small pieces

2 small onions, diced

4 cloves garlic, minced

2 cups fresh okra, trimmed and sliced into 1/2 inch pieces

1.5 to 2 pounds whole fresh cherry tomatoes

1 teaspoon crushed red pepper flakes

Sea salt, to taste

Freshly ground black pepper, to taste

1/2 cup dry white wine

1/2 cup chicken broth

2 cups brown rice

Directions

  1. Prepare the brown rice according to package directions using chicken broth instead of water. Set aside when done.

  2. While the rice cooks, heat a large skillet over medium-high heat. Add the diced bacon and cook until the fat is rendered and the bacon is crispy, about 5 to 7 minutes. Transfer to a paper towel-lined plate, leaving about 1 tablespoon of bacon fat in the pan.

  3. Add the diced onions to the skillet and sauté for 3 to 4 minutes until softened and fragrant. Stir in the minced garlic and red pepper flakes, cooking for another 30 seconds until aromatic.

  4. Add the sliced okra to the pan and cook for 5 to 6 minutes, stirring occasionally, until it begins to soften and the pieces lose their slimy texture.

  5. Pour in the white wine and chicken broth, scraping up any browned bits from the bottom of the pan. Add the whole cherry tomatoes and bring the mixture to a gentle simmer.

  6. Reduce heat to medium and continue cooking for 12 to 15 minutes, stirring occasionally, until the cherry tomatoes have burst and released their juices, creating a light sauce. The okra should be tender but not falling apart.

  7. Return the cooked bacon to the skillet and stir to combine. Season with salt and pepper to taste.

  8. Divide the warm brown rice among four bowls or plates. Spoon the okra and tomato mixture with its sauce over each portion of rice and serve immediately.
