Ingredients

1 pound ground beef

1 yellow onion, finely diced

1 large jalapeño, seeded and finely minced

2 tablespoons taco seasoning mix

2 (10-ounce) cans Rotel diced tomatoes with green chilies

32 ounces Velveeta cheese, cut into cubes

Directions

  1. Heat a large skillet over medium heat. Add the ground beef and diced onion, breaking up the meat with a wooden spoon as it cooks. Continue cooking until the beef is completely browned and no longer pink, about 5–7 minutes.

  2. Carefully drain off excess fat from the skillet using a colander or paper towel.

  3. Return the beef mixture to the skillet and add the minced jalapeño and taco seasoning mix. Add ½ cup of water and stir well. Increase the heat to medium-high and cook, stirring often, until the liquid has nearly evaporated, about 5–8 minutes.

  4. Remove the skillet from heat.

  5. Transfer the cooked beef mixture to a 4- to 6-quart slow cooker. Add the cubed Velveeta cheese and both cans of Rotel (with their liquid). Stir everything together until well combined.

  6. Cover the slow cooker and cook on low heat for 1 to 2 hours, until the cheese is completely melted and the dip is smooth and heated through. Switch the slow cooker to the warm setting for serving.

  7. Before serving, give the dip a good stir. Serve warm with tortilla chips, crackers, or fresh vegetables.
