Ingredients

1½ tablespoons Aleppo pepper

1 cup Plain whole-milk Greek-style yogurt

3 tablespoons Extra-virgin olive oil

2 tablespoons Red wine vinegar

2 tablespoons Tomato paste

2 teaspoons Coarse kosher salt

1 teaspoon Freshly ground black pepper

6 Garlic cloves, peeled and flattened

1 Lemon, thinly sliced into rounds

1 Lemon wedges for serving

2¼ pounds Skinless boneless chicken thighs and/or breast halves, cut into 1 1/4-inch cubes

Bamboo skewers, soaked in water

Directions

  1. Soak bamboo skewers in water for at least 30 minutes before grilling to prevent them from burning.

  2. In a large bowl, combine Greek yogurt, Aleppo pepper, olive oil, red wine vinegar, tomato paste, kosher salt, and black pepper. Stir until smooth and well blended.

  3. Add the flattened garlic cloves to the marinade and stir to incorporate their flavor throughout.

  4. Add the lemon slices to the marinade and mix gently.

  5. Place the chicken cubes into the marinade and stir until all pieces are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 8 hours, to allow the flavors to develop.

  6. Preheat your grill to medium-high heat (around 400°F).

  7. Remove the chicken from the marinade, allowing excess marinade to drip off. Thread the chicken cubes onto the soaked bamboo skewers, spacing them evenly along each skewer.

  8. Place the loaded skewers on the preheated grill grates. Grill for 12–15 minutes, turning every 3–4 minutes to ensure even cooking and charring on all sides, until the internal temperature of the chicken reaches 165°F.

  9. Transfer the cooked kebabs to a serving platter. Sprinkle with additional Aleppo pepper for a finishing touch and serve immediately with fresh lemon wedges on the side.
