Ingredients
2 spring onions, shredded
1 lime, zest and juice
1 ½ tablespoons fish sauce
2 teaspoons agave syrup
1 cucumber, cut into thin matchsticks
1 Chinese cabbage leaf, finely sliced
1 red chilli, thinly sliced (optional)
Directions
Place the shredded spring onions in a small bowl of cold water and let them sit for a few minutes to curl. Meanwhile, in a separate small bowl, whisk together the lime zest, lime juice, fish sauce, and agave syrup until the syrup dissolves completely.
In a large bowl, toss the cucumber matchsticks and sliced Chinese cabbage with the lime-fish sauce dressing until evenly coated. Transfer to a serving dish.
Drain the curled spring onions and pat them dry with a paper towel. Scatter them over the slaw and garnish with the sliced red chilli, if desired.
