½ cup lowfat vanilla yogurt
1 tablespoon ground flaxseed
Pinch of salt
Fresh blueberries for topping
Chopped pecans for topping
Brown sugar for topping
Directions
In a single-serve storage container or mason jar, layer the rolled oats, vanilla yogurt, ground flaxseed, and salt in that order. Do not stir the mixture; the distinct layers will hydrate and combine overnight as the oats absorb the moisture from the yogurt.
Cover the container and refrigerate overnight (at least 8 hours, or up to 2 days). The oats will soften completely and the mixture will achieve a thick, creamy consistency.
