Fresh mint is steeped in a simple sugar syrup, then combined with white rum, lime juice, and zest to create a vibrant, citrusy ice pop that's perfect for warm days. Ingredients

1 cup granulated sugar

2 cups water

½ cup fresh mint, loosely chopped

¼ cup white rum

¼ cup fresh lime juice

1 tablespoon lime zest

Directions

  1. Pour the water and sugar into a small saucepan and bring to a rolling boil over medium-high heat. Add the chopped mint to the pot and stir well to combine. Once the sugar has fully dissolved, remove the pan from the heat.

  2. Cover the saucepan and allow the mint to steep for 10 minutes, allowing the flavors to infuse into the syrup. Stir occasionally as the mixture cools.

  3. Pour the cooled mint syrup through a fine-mesh strainer set over a large mixing bowl, pressing gently on the mint to release any remaining liquid. Discard the solids.

  4. Stir the white rum, fresh lime juice, and lime zest into the strained mint syrup until well combined.

  5. Divide the mixture evenly among ten 3-ounce popsicle molds, filling each to the top. Insert popsicle sticks into each mold according to the manufacturer's instructions.

  6. Place the molds in the freezer and freeze for 6 to 8 hours, or until the popsicles are completely solid throughout. Remove from molds by running warm water briefly over the outside, then pull out the popsicles and serve immediately.
