Ingredients

3 large, firm tomatoes

8 ounces low-fat cottage cheese

1/2 teaspoon dried basil

1/8 teaspoon black pepper

3 tablespoons bread crumbs

2 sprays cooking spray

Directions

  1. Wash your hands thoroughly with soap and warm water. Rinse and pat dry with a clean towel.

  2. Rinse the tomatoes under cool running water and pat dry. Cut each tomato in half crosswise, creating 6 halves total.

  3. In a small bowl, combine the cottage cheese, dried basil, and black pepper. Stir until the herbs and seasonings are evenly distributed throughout the cheese.

  4. Spoon an equal portion of the cottage cheese mixture onto each tomato half, distributing it evenly across the cut surface.

  5. Sprinkle the bread crumbs over the cheese-topped tomato halves, dividing them equally. Lightly spray each tomato with cooking spray until the breadcrumbs are misted.

  6. Preheat your broiler. Coat a broiler pan or baking sheet with cooking spray to prevent sticking.

  7. Arrange the prepared tomato halves on the broiler pan, cut side facing up. Broil 4 to 6 inches from the heat source for 8 to 10 minutes, until the breadcrumb topping is golden brown and the cheese is hot and beginning to bubble. Do not allow the tomatoes to char excessively.

  8. Remove from the broiler and let cool for 1 to 2 minutes before serving.
