Ingredients
1½ pounds ground chuck
4 teaspoons diced canned green chiles
¼ cup fresh cilantro, chopped
4 teaspoons taco seasoning
4 teaspoons yellow mustard
1 cup shredded Monterey Jack cheese
4 large burger buns

Directions
In a large bowl, combine the ground chuck, diced green chiles, chopped cilantro, taco seasoning, yellow mustard, and shredded Monterey Jack cheese. Using your hands, mix thoroughly until all ingredients are evenly distributed throughout the meat. Divide the mixture into 4 equal portions and gently form each into a burger patty approximately 1 inch thick.
Preheat your grill to high heat. Lightly oil the grates to prevent sticking. Reduce the grill temperature to medium-high and place the burger patties on the grates. Grill for 4–5 minutes per side, or until the internal temperature reaches 160°F for food safety, reaching your desired level of doneness. For toasted buns, place them cut side down on the grill during the final minute of cooking and lightly toast.
Transfer the cooked burgers to a clean platter and loosely tent with aluminum foil. Allow them to rest for 5 minutes—this keeps them juicy and helps the cheese melt evenly.
Assemble each burger by placing a patty on a toasted bun and topping with sliced sweet onion, tomato slices, and any additional condiments as desired. Serve immediately.
