8 slices whole-wheat or multigrain bread, toasted

1 cucumber, peeled if desired and thinly sliced

2 cans sardines in water, 4 oz each, drained

1/4 cup fresh lemon juice

1 large tomato, thinly sliced

1 red or white onion, peeled and thinly sliced

Directions

  1. Arrange 4 slices of toasted bread on a clean work surface or cutting board.

  2. Layer the cucumber slices evenly across each slice of toast, covering the surface.

  3. Distribute the drained sardines over the cucumber slices, then use a fork to gently mash and break them into smaller pieces.

  4. Spread the mashed sardines gently to form an even layer across the cucumber, being careful not to tear the bread.

  5. Drizzle the lemon juice over the sardine layer, distributing it evenly across all four slices.

  6. Arrange the tomato slices on top of the sardines, covering the filling.

  7. Top with the sliced onion, distributing it evenly across each slice.

  8. Place the remaining 4 slices of toasted bread on top to complete the sandwiches, then press down gently to hold everything together.
