Ingredients

1 cup dried cranberries

2 cups granulated sugar

3/4 cup heavy cream

7 ounces marshmallow fluff

1 1/2 teaspoons orange extract

3 large oranges, zested

Heavy pinch of salt

3/4 cup unsalted butter

11 ounces white chocolate chips

Directions

  1. Line an 8-inch square baking dish with parchment paper and set aside. In a medium saucepan, combine butter, sugar, salt, and heavy cream over medium-high heat. Stir constantly as the mixture comes to a rolling boil, then maintain that boil for exactly 4 minutes while continuing to stir.

  2. While the butter mixture boils, place orange extract, orange zest, white chocolate chips, and marshmallow fluff in a large mixing bowl.

  3. Carefully pour the hot butter mixture over the white chocolate and marshmallow. Using an electric mixer on medium speed, blend until the white chocolate is completely melted and the mixture is smooth and well combined.

  4. Gently fold the dried cranberries into the fudge mixture until evenly distributed.

  5. Pour the fudge into the prepared baking dish, using a spatula to smooth the top. Refrigerate for at least 3 hours until completely set.

  6. Cut the fudge into bite-sized pieces. Store in an airtight container in the refrigerator for up to two weeks.
