Lemon Panna Cotta with Fresh Berries

Ingredients
1/3 cup fat-free milk
1 (0.25 ounce) envelope unflavored gelatin
1/2 cup granulated sugar
2 cups heavy cream
1/4 teaspoon lemon extract
1 teaspoon vanilla extract
Fresh berries, for serving
Directions
Pour the fat-free milk into a small bowl and sprinkle the gelatin powder over it. Stir gently to combine and let sit for a few minutes to allow the gelatin to soften.
In a medium saucepan, combine the heavy cream and granulated sugar over medium heat. Bring the mixture to a gentle boil, stirring occasionally and watching carefully as the cream will bubble up quickly. Once boiling, add the softened gelatin mixture and stir constantly for 1 minute until the gelatin is completely dissolved.
Remove the saucepan from heat. Stir in the vanilla extract and lemon extract, mixing until fully incorporated.
Carefully pour the warm panna cotta mixture into four individual ramekin dishes, dividing evenly.
Allow the ramekins to cool uncovered at room temperature until they reach room temperature, approximately 20–30 minutes.
Cover each ramekin with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until the panna cotta is fully set and chilled.
When ready to serve, top each panna cotta with a generous portion of fresh berries and enjoy immediately.
