Ingredients

1/2 cup low-sodium soy sauce

1/4 cup cornstarch

3 tablespoons sherry

2 tablespoons brown sugar

1 tablespoon minced fresh ginger

2 cloves garlic, minced

1 pound flank steak, trimmed and sliced very thin against the grain

3 tablespoons peanut or olive oil

1 pound broccoli florets

1/4 cup beef broth

1/4 cup oyster sauce

Salt to taste

Chow mein noodles for serving

Directions

  1. In a small bowl, whisk together the soy sauce, cornstarch, sherry, brown sugar, minced ginger, and minced garlic until well combined. Divide this mixture in half. Pour one half over the sliced beef in a separate bowl and toss gently with your hands to coat evenly. Set the remaining half of the sauce mixture aside for later.

  2. Heat the oil in a large wok or heavy skillet over high heat until it shimmers and is very hot. Add the broccoli florets and stir-fry for about 1 minute, stirring frequently to coat with oil. Transfer the broccoli to a clean plate and set aside.

  3. Return the skillet to high heat and allow it to become very hot again. Using tongs, carefully spread the marinated beef in a single layer across the skillet. Do not stir for the first 60 seconds to allow a golden crust to form on the bottom. After 1 minute, flip the meat and cook the other side for an additional 30 seconds. Transfer the beef to a clean plate.

  4. Pour the reserved sauce mixture into the hot skillet along with the beef broth and oyster sauce. Stir constantly and cook over high heat for 1-2 minutes, until the sauce begins to thicken and becomes glossy. Add the cooked beef and broccoli back into the skillet and toss everything together to coat thoroughly in the sauce. Taste and add a pinch of salt if needed.

  5. Serve the beef and broccoli mixture over warm chow mein noodles, making sure to spoon the sauce over the top.
