¼ cup mayonnaise
¼ cup grainy mustard
1 tablespoon honey
¼ teaspoon cayenne pepper
kosher salt
freshly ground black pepper
2 pounds salmon fillets
Directions
Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly oil it to prevent sticking.
In a small bowl, whisk together the mayonnaise, grainy mustard, honey, and cayenne pepper until well combined and smooth.
Pat the salmon fillets dry with paper towels. Arrange them skin-side down on the prepared baking sheet, leaving space between each piece if using individual portions.
Season the salmon lightly with kosher salt and freshly ground black pepper on both sides.
Spread the honey-mustard mixture evenly over the top of each salmon fillet, coating generously.
Bake in the preheated oven for 12-15 minutes, or until the salmon reaches an internal temperature of 145°F at the thickest part. The salmon should be opaque and flake easily with a fork when done.
Remove from the oven and serve immediately while warm, spooning any pan juices over the top if desired.
