Ingredients

1 whole chicken (3½–4 pounds), cut into 8 pieces

3 tablespoons vegetable oil, divided

Kosher salt to taste

Freshly ground black pepper to taste

2 lemons, halved

2 oranges, halved

Directions

  1. Heat a grill to medium temperature. Pat the chicken pieces dry and lightly brush all sides with 2 tablespoons of the vegetable oil. Season generously with kosher salt and freshly ground black pepper.

  2. Place the chicken skin-side down on the grill. Cook for 12–15 minutes without moving, allowing the skin to develop a golden, crispy exterior.

  3. Turn the chicken pieces over and continue grilling. As the chicken cooks, squeeze the juice from 2 lemon halves and 2 orange halves over the meat, repeating every few minutes to baste and infuse flavor.

  4. Continue grilling until an instant-read thermometer inserted into the thickest part of a thigh (without touching bone) reads 165°F, about 12–20 minutes longer. Total cooking time is 25–35 minutes.

  5. Meanwhile, brush the remaining 2 lemon halves and 2 orange halves with the remaining 1 tablespoon of vegetable oil, cut-side up.

  6. Place the citrus halves cut-side down on the grill. Cook until the cut surface is lightly charred and caramelized, 5–10 minutes. Do not flip.

  7. Transfer the grilled chicken and citrus to a serving platter. Serve the grilled lemon and orange halves alongside the chicken for squeezing fresh juice over each bite.
