Crispy golden puff pastry wrapped around seasoned pork sausage, a beloved British-style snack or light main course. Brushed with egg wash for a beautiful finish and served warm, these sausage rolls are perfect for parties, lunch, or a casual dinner.

Ingredients
1 pound puff pastry, thawed
1 pound pork sausage meat
¼ cup Dijon mustard
1 large egg, beaten
Directions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
On a lightly floured surface, gently roll out the thawed puff pastry into a thin rectangle, approximately 1/8 inch thick.
Spread the Dijon mustard evenly across the entire surface of the pastry sheet.
Lay the pork sausage meat along the top edge of the pastry in a thin, even strip about 2 inches wide.
Tightly roll the pastry over the sausage meat, sealing the edge with a light press. The sausage should be completely enclosed.
Using a sharp knife, cut the rolled pastry into 12 equal portions, each about 1.5 inches long.
Place the sausage rolls seam-side down on the prepared baking sheet, leaving space between each one.
Brush the top and sides of each sausage roll with the beaten egg to create a golden finish.
Bake for 20-25 minutes until the pastry is puffed and deep golden brown and the internal pork temperature reaches 160°F (71°C).
Remove from the oven and let cool for 2-3 minutes before serving warm.
