Ingredients

400g baby leaf spinach

25g butter

1 tsp grated nutmeg

100g crumbled feta cheese

Directions

  1. Melt the butter in a large saucepan over medium heat until it foams gently.

  2. Add the baby leaf spinach to the pan and stir frequently, allowing it to wilt gradually. This will take about 4–5 minutes as the spinach releases moisture.

  3. Once all the spinach is fully wilted and any excess liquid has evaporated, sprinkle the grated nutmeg over the top and stir to distribute evenly.

  4. Remove from heat and fold in the crumbled feta cheese gently, reserving a small amount to scatter over the top if desired.

  5. Transfer to a serving dish and serve immediately while warm.
