Ingredients
2 cups butter, room temperature
3 eggs
1 cup sugar
7 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
16 ounces cream cheese, room temperature
2 pounds farmers cheese
1 egg, for egg wash
½ cup sugar, for topping
Directions
In a medium bowl, combine the cream cheese, farmers cheese, 1 egg, and 1 cup sugar. Mix until smooth and well blended. Set the cheese filling aside.
In a large bowl, whisk together the softened butter, 3 eggs, and 1 cup sugar until light and fluffy, about 2 minutes.
Add 2 cups of flour, baking powder, and salt to the butter mixture. Whisk to combine, then gradually add the remaining flour, a cup at a time, whisking until a soft dough forms.
On a lightly floured surface, roll out the dough to a thickness of about ¼ inch. Using a 3-inch round cutter, cut out circles from the dough.
Place 1 tablespoon of the cheese filling on one half of each dough circle. Fold the dough in half over the filling, creating a semi-circle and gently pressing the edges to seal.
Whisk the remaining 1 egg in a small bowl. Brush the egg wash over the top of each cookie, then sprinkle with the ½ cup sugar for topping.
Place the cookies on a baking sheet lined with parchment paper. Bake at 400°F (200°C) for approximately 15 minutes, until the cookies are golden brown and crispy. The internal temperature of the baked goods will reach safe levels through the heat of the oven.
