⅔ cup Dried flageolet beans
4 cup Low-sodium vegetable broth
½ teaspoon Coarse salt
Directions
Place dried flageolet beans in a fine-mesh colander and rinse thoroughly under cool running water to remove dust and debris.
Transfer the rinsed beans to a medium pot and add the vegetable broth. Bring to a boil over high heat, then immediately reduce the heat to medium-low and simmer gently.
Simmer uncovered for 1 hour and 45 minutes, or until the beans are completely tender when pierced with a fork. Stir occasionally and add water if needed to keep the beans submerged.
Once the beans are tender and creamy, season with coarse salt and stir well to combine.
Serve warm as a main course or side dish. The cooking liquid will have absorbed much of the bean flavor, creating a naturally rich broth.
