Ingredients
1 pound perch fillets, fresh or frozen
1 small onion, peeled and thinly sliced
1 cup low-sodium tomato sauce
1/2 teaspoon garlic powder
2 teaspoons chili powder
1 teaspoon dried oregano
1/8 teaspoon ground cumin
Butter or margarine for greasing the baking dish
Directions
Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9 x 13-inch baking dish with butter or margarine.
Pat the perch fillets dry with paper towels. Arrange them in a single layer in the prepared baking dish, separating them into 4 individual pieces if needed.
In a small bowl, combine the sliced onion, tomato sauce, garlic powder, chili powder, dried oregano, and ground cumin. Stir well to blend all ingredients evenly.
Pour the tomato-onion mixture evenly over the fish fillets, distributing it across all pieces.
Place the baking dish in the preheated oven and bake for 12 to 15 minutes, until the fish is opaque throughout and flakes easily when tested with a fork (internal temperature should reach 145 degrees Fahrenheit for cooked fish).
Remove from the oven and serve immediately while hot, spooning the pan sauce over each portion.
