Ingredients

4 large Boneless, skinless chicken breasts

2 tsp Sea salt

Freshly ground black pepper

3 tbsp Extra-virgin olive oil

3 tbsp Unsalted butter

28 leaves Fresh sage leaves

3 tbsp Fresh lemon juice

Directions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with sea salt and freshly ground black pepper.

  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.

  3. Place the seasoned chicken breasts in the hot oil and sear for 6-7 minutes on the first side without moving them, until golden brown.

  4. Flip the chicken and cook for another 6-7 minutes on the second side until the internal temperature reaches 165°F.

  5. Reduce heat to medium. Add the butter and fresh sage leaves to the skillet, allowing the butter to melt and coat the chicken.

  6. Pour the fresh lemon juice around the chicken and swirl gently to combine with the melted butter and sage. Cook for 1-2 minutes until the sauce is warm and fragrant.

  7. Transfer the chicken to serving plates and spoon the sage-lemon sauce with the butter and fresh sage leaves over the top. Serve immediately.

This is a weeknight workhorse: all seven ingredients are standard pantry and produce staples at any Charlotte grocery chain, and you'll find fresh sage bundled at Harris Teeter, Food Lion, and Kroger year-round. The cost per serving is under $3 if you buy bone-in chicken breasts on sale, and the recipe is genuinely honest about its 20 minutes—searing takes 12 to 15 minutes depending on thickness, leaving real time for a side. The only caveat is that this reheats unevenly; the chicken dries slightly when microwaved, so it's best eaten the night you make it or served cold the next day as a salad protein.
