Ingredients

2 cups basmati rice

3½ cups chicken or vegetable broth

2 tablespoons olive oil

½ cup diced onion

Pinch of saffron threads

2 tablespoons hot water

1 teaspoon salt

Directions

  1. Steep the saffron threads in hot water for 10 minutes, then set aside. Rinse the basmati rice thoroughly under cold water until the water runs clear, then drain well.

  2. Heat the olive oil in a 4-quart pot over medium heat. Once the oil is shimmering and hot, add the diced onion. Cook, stirring occasionally, for about 3 minutes until the onion becomes soft and lightly browned.

  3. Add the drained rice to the pot and stir to coat evenly with the oil for about 1 minute. Pour in the broth and add the saffron with its soaking water and the salt. Stir well to combine.

  4. Increase heat to high and bring the mixture to a boil, stirring occasionally.

  5. As soon as the liquid reaches a boil, reduce the heat to low, cover the pot tightly with a lid, and allow the rice to cook undisturbed for 20 minutes without lifting the lid or stirring.

  6. Turn off the heat and let the covered pot sit undisturbed for an additional 5 minutes to complete the steaming process.

  7. Remove the lid and fluff the rice gently with a fork, separating the grains. Serve immediately.
