2 cups cooked rice
16 ounces part skim mozzarella cheese
1 large egg
1/4 teaspoon salt
2 cups low-sodium tomato purée
Directions
Preheat your oven to 400°F. Line a large baking sheet with parchment paper or lightly grease it with cooking spray.
In a large mixing bowl, combine the cooked rice, shredded mozzarella cheese, egg, and salt. Mix thoroughly until the ingredients are evenly distributed and the cheese is well incorporated throughout the rice mixture.
Spread the rice mixture evenly onto the prepared baking sheet, pressing it down gently to form a thin, pizza-like crust about 1/4 inch thick.
Bake the rice crust for 15-20 minutes until it becomes golden brown and crispy at the edges. The crust should feel firm when lightly pressed.
Remove the crust from the oven and spread the tomato purée evenly over the top, leaving a small border around the edges.
Return to the oven and bake for an additional 5-8 minutes until the sauce is heated through and the crust remains crispy. Slice into 12 pieces and serve warm.
