Ingredients

1 can (15 oz) chickpeas, drained and skinned

2 tablespoons sun dried tomato oil

¼ cup sun dried tomatoes in oil

2 teaspoons roasted garlic

¼ cup water

½ teaspoon salt

½ teaspoon black pepper

Directions

  1. Add the drained chickpeas, sun dried tomato oil, sun dried tomatoes, roasted garlic, water, salt, and black pepper to a high-powered blender.

  2. Blend on high speed until the mixture becomes completely smooth and creamy, about 2–3 minutes. If the hummus is too thick and not blending smoothly, add additional water a tablespoon at a time until you reach your desired consistency.

  3. Transfer the hummus to a serving bowl and taste for seasoning, adjusting salt and pepper as needed.

  4. Serve the hummus with fresh vegetables such as carrot sticks, cucumber slices, bell pepper, and celery, or pair with your favorite crackers.

Sun dried tomatoes and the oil that preserves them are a special order at most Charlotte groceries—Food Lion and Harris Teeter carry them, but you'll want to confirm before the trip, since not every location stocks them year-round. The rest is pantry staple, so one stop suffices if you shop thoughtfully. Five minutes is honest for a food processor whirl, and the yield (about half a cup per serving) makes it perfect for a dip board, lunch boxes, or sandwich spread without leftovers stress. This is a strong weeknight choice: zero active attention, no technique risk, and the assertive flavor means small portions satisfy.
