6 cups cubed honeydew melon, about half of a medium melon

1/3 cup sugar

1/4 cup fresh lime juice

3 cups seltzer

Lime peels for garnishing

  1. In a blender, combine the cubed honeydew melon with the sugar and fresh lime juice. Blend until completely smooth, working in batches if needed.

  2. Strain the mixture through a fine-mesh sieve into a shallow freezer-safe container, pressing gently to extract all the liquid and discard solids.

  3. Freeze the mixture for 2 to 3 hours, stirring with a fork every 30 minutes to create a granita texture with ice crystals. Continue until the entire mixture has a slushy, frozen consistency.

  4. Divide the granita among 6 serving glasses, filling each glass about halfway.

  5. Top each glass with 1/2 cup of chilled seltzer, stirring gently to combine.

  6. Garnish each spritzer with a lime peel and serve immediately.
