Ingredients
1 pound fresh or thawed cod fillets
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon ground black pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1 tablespoon fresh lemon juice
1 1/2 tablespoons melted margarine
Directions
Wash your hands thoroughly with soap and warm water before handling the fish and preparing the recipe.
If using frozen cod fillets, thaw them completely following the package directions. Fresh fillets can be used immediately.
Preheat your oven to 350°F (175°C). If the fish fillets are large, cut them into four roughly equal portions.
Arrange the cod fillets in an ungreased 13x9 inch baking dish, spacing them evenly.
In a small bowl, mix together the paprika, garlic powder, onion powder, black pepper, dried oregano, and dried thyme until well combined.
Sprinkle the herb and spice mixture evenly over all the fish fillets. Drizzle the lemon juice evenly across the fish.
Drizzle the melted margarine evenly over the seasoned fish fillets.
Bake in the preheated 350°F oven for 20-25 minutes, until the fish is opaque throughout and flakes easily when tested with a fork (internal temperature should reach 145°F). Serve immediately while hot.
Comments
Cod is consistently available at all major Charlotte chains including Harris Teeter, Food Lion, Kroger, and Walmart, and the rest of the pantry staples (paprika, garlic powder, onion powder, black pepper, oregano, thyme, lemon juice, margarine) are basic items you'll find anywhere—no second stop needed. At roughly $8-10 per pound for cod, this works out to $2–2.50 per serving for protein alone, making it budget-friendly for a weeknight. The 35-minute stated time is honest: prepping the spice mix and lemon-margarine topping takes maybe 5 minutes, and the bake is 20–25 minutes at 400°F. It's a straightforward family dish that requires minimal attention once in the oven, though it doesn't reheat especially well—leftovers can dry out—so plan to eat it fresh the same night.
