Ingredients
4 6-ounce Bone-in chicken thighs
2 teaspoons Dried oregano
1 teaspoon Ground cumin
2 tablespoons Fresh lime juice
½ teaspoon Kosher salt
¼ teaspoon Black pepper
1 Orange, sliced (optional garnish)
Directions
Preheat your oven to 425°F. Pat the chicken thighs dry with paper towels and place skin-side up on a clean cutting board.
Gently press down on each thigh to help release excess fat from under the skin.
Using a sharp knife, carefully trim away any large pockets of excess fat from the edges and under the skin, leaving the skin intact.
In a mixing bowl, combine the dried oregano, ground cumin, fresh lime juice, kosher salt, and black pepper. Stir until well blended.
Add the trimmed chicken thighs to the seasoning mixture and turn to coat evenly on all sides. At this point, you may refrigerate the chicken covered for up to 8 hours, or proceed directly to roasting.
Transfer the seasoned chicken thighs along with all marinade to a baking pan, arranging them skin-side up in a single layer.
Roast in the preheated 425°F oven for approximately 60 minutes, until the skin is deep golden brown and the internal temperature reaches 165°F at the thickest part of the thigh not touching bone.
Remove from the oven and let rest for a few minutes. Arrange on a serving platter and garnish with fresh orange slices if desired. Serve immediately while still hot.
