Peach Napoleon with Sugared Wonton Wrappers

Ingredients
12 wonton wrappers
2-3 teaspoons sugar, divided (for wonton toppings and cream)
1/2 cup heavy whipping cream
1 tablespoon powdered sugar, for garnish
2 fresh peaches, cleaned and thinly sliced

Directions
Preheat your oven to 400°F. Lightly coat a large baking sheet with cooking spray.
Arrange the wonton wrappers in a single layer on the prepared baking sheet. Lightly spray the top surface of each wrapper with cooking spray.
Sprinkle about 2-3 teaspoons of sugar evenly across all the wonton wrappers. Bake in the preheated oven for approximately 5 minutes, until the wrappers are golden brown and crispy. Remove from the oven and allow to cool slightly.
While the wonton wrappers cool, place the heavy whipping cream in a chilled bowl. Using an electric mixer or whisk, beat the cream until it begins to thicken. Gradually add any remaining sugar while continuing to beat until stiff peaks form.
To assemble each dessert, place one crispy wonton wrapper on a serving plate or dessert dish. Spread 2 tablespoons of whipped cream on top, then arrange 1/4 of a peach (a few slices) over the cream. Place another wonton wrapper on top and repeat with another layer of 2 tablespoons whipped cream and 1/4 of a peach (totaling 1/2 peach per dessert). Crown with the final wonton wrapper.
Sift the powdered sugar over the top of each Napoleon for garnish. Serve immediately to maintain the crispness of the wonton layers.
