Ingredients
1½ cups Corn kernels, fresh or canned
½ cup Onion, finely diced
8 springs Fresh cilantro, finely chopped
20 leaves Fresh mint leaves, finely chopped
1 Green chili, deseeded and finely chopped (optional)
1 teaspoon Chaat masala spice blend
½ teaspoon Chili powder
1 tablespoon Fresh lemon juice
Salt, to taste
Directions
If using fresh corn, boil it until tender and remove the kernels from the cob. If using canned corn, drain and rinse thoroughly. Pour the corn kernels into a large mixing bowl.
Add the finely diced onion, chopped cilantro, and chopped mint leaves to the bowl with the corn.
Add the chaat masala, chili powder, and chopped green chili (if using) to the mixture.
Pour in the fresh lemon juice and season with salt to taste.
Toss all ingredients together until well combined and evenly distributed.
Cover the bowl and refrigerate for 30 to 45 minutes to allow the flavors to meld and the salad to chill thoroughly.
Stir once more before serving, and adjust seasoning if needed. Serve cold as a refreshing side dish.
