Ingredients

2 bell peppers, diced

1 can black beans, drained and rinsed

1 can corn, drained

1 can pinto beans, drained and rinsed

1 zucchini, diced

2 Roma tomatoes, diced

5 to 6 cups cooked rice

1 tablespoon ground cumin

1 tablespoon garlic salt

¼ cup fresh cilantro, chopped

Non-stick cooking spray

Directions

  1. Prepare 5 to 6 cups of cooked rice according to package directions and set aside to keep warm.

  2. Drain and rinse the black beans, pinto beans, and corn in a colander. Dice the bell peppers into bite-sized pieces, cut the zucchini into small cubes, and dice the Roma tomatoes.

  3. Tear off two long pieces of heavy-duty aluminum foil for each of the 4 servings. Arrange them in a cross or plus sign shape, then lightly spray the center area with non-stick cooking spray.

  4. On each foil cross, layer the drained black beans, pinto beans, and corn in the center. Top with the diced bell peppers, zucchini, and tomatoes.

  5. Sprinkle each packet with cumin, garlic salt, and fresh cilantro. Top generously with warm cooked rice, dividing the rice evenly among the 4 packets.

  6. Fold the first layer of foil up and over the filling, sealing it closed. Then fold the second layer of foil over and around the packet, sealing all open edges tightly to create a secure bundle.

  7. Place the foil packets on a grill grate over medium-high heat or at the edge of a campfire. Cook for 8 to 10 minutes, turning each packet once halfway through cooking, until the foil is lightly charred and the vegetables are heated through.

  8. Carefully open each packet (steam will be hot), stir the contents gently to combine, and serve immediately.
