Ingredients
1 tablespoon sake
1 tablespoon soy sauce
1/2 tablespoon sugar
1 tablespoon vegetable oil
1 large egg
nori strips for garnish
1 scallion, chopped
1/4 teaspoon toasted sesame seeds
Directions
In a small bowl, combine the sake, soy sauce, and sugar. Stir until the sugar is fully dissolved. Set the teriyaki sauce aside.
Break the egg into a separate small bowl.
Heat a small frying pan over medium heat. Once hot, add the vegetable oil.
Tilt the pan to one side and carefully slide the egg from the bowl into the hot oil.
Keep the pan tilted and fry the egg until the edges turn golden brown and the white is mostly set, about 2 minutes.
Remove excess oil from the pan using a paper towel, leaving just a thin coating.
Pour the teriyaki sauce into the pan and tilt and swirl gently so the sauce coats the egg. Continue cooking until the sauce reduces to a thick, glossy glaze and the egg white is fully cooked through to an internal temperature of 160°F, about 1 minute.
Transfer the egg to a bowl of warm rice. Top with nori strips, chopped scallion, and sesame seeds. Drizzle any remaining sauce from the pan over the egg and rice.
