Ingredients

4 large center-cut pork chops, 1 inch thick

2 tsp seasoning salt

1 tsp black pepper

⅓ cup all-purpose flour

⅓ cup vegetable oil

2 medium onions, sliced

2 cup water

Directions

  1. Pat the pork chops dry. Season both sides generously with seasoning salt and black pepper. Place flour in a shallow dish and dredge each pork chop, coating completely on both sides and shaking off excess.

  2. Heat vegetable oil in a large, heavy-bottomed skillet over medium-high heat until shimmering. Place the floured pork chops in the hot oil and sear for 3 minutes per side until well-browned and golden. Transfer the cooked pork chops to a plate and set aside.

  3. Add the sliced onions to the oil and drippings remaining in the skillet. Cook for 1 minute, stirring occasionally. Sprinkle the remaining flour over the onions and stir constantly, cooking until the onions and flour are lightly browned, about 2 to 3 minutes.

  4. Slowly pour 2 cups of water into the skillet, stirring constantly to combine with the browned flour and onions until a smooth gravy forms. Bring the mixture to a boil.

  5. Return the pork chops to the skillet, nestling them into the gravy. Cover the skillet, reduce heat to low, and simmer for 20 to 25 minutes until the gravy thickens, the onions become tender, and the pork chops are cooked through and tender. The internal temperature of the pork should reach 145F.

  6. Serve the pork chops hot, spooning the thick onion gravy generously over the top.

This is a weeknight workhorse that checks every box for Charlotte cooks: every ingredient is a staple at Harris Teeter, Food Lion, Walmart, ALDI, or Kroger, nothing costs more than a few dollars per serving, and the 40-minute stated time is honest—you're searing chops, building a pan sauce with onions, then braising covered. Smothered pork chops are a Southern classic that reheats beautifully, making it ideal for families who need a reliable repeat that does not demand fussing once it hits the pan.
