Ingredients
2 cups sugar
3 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
1/2 cup margarine
1 cup peanut butter
1/2 cup water
4 cups rolled oats
1 cup non-fat dry milk
1 cup raisins
1 teaspoon vanilla extract
Directions
Wash your hands thoroughly with soap and warm water before beginning.
In a large saucepan, combine sugar, cocoa powder, salt, margarine, peanut butter, and water. Place over medium-high heat and stir continuously until the mixture reaches a full, rolling boil. Maintain the boil for exactly 1 minute, stirring frequently to ensure even heating and prevent sticking.
Remove the saucepan from heat immediately after the 1-minute boil.
Stir in the rolled oats, non-fat dry milk, raisins, and vanilla extract until everything is evenly combined. The mixture should be thick and uniform.
Working quickly while the mixture is still warm, drop rounded tablespoon portions onto sheets of waxed paper, spacing them about 2 inches apart to allow for setting.
Allow the cookies to cool and firm up at room temperature for 15 to 20 minutes. Once set, they can be stored in an airtight container. No refrigeration needed.
Comments
This is a straightforward no-bake cookie that delivers on its 30-minute promise—no oven time means it truly is half an hour from start to eating. All ingredients are shelf-stable staples available at any Charlotte chain store, with nothing requiring a special trip. At roughly 12 cents per cookie, it's one of the cheapest desserts you can make, driven by bulk oats and peanut butter doing the heavy lifting. The real limitation is that these don't reheat well and must be eaten the same day or stored cold, and they're fussy enough that humidity and temperature swings can turn them soft or grainy, making them less forgiving for a weeknight when you want to set and forget.
