Ingredients
16 ounces Velveeta cheese, cubed
1 small can diced green chilies, canned and drained
½ cup diced tomatoes, canned and drained
Directions
Cube the Velveeta cheese and place it in a medium saucepan.
Open the can of diced green chilies, drain well, and set aside.
Open the can of diced tomatoes, drain thoroughly, and set aside.
Heat the saucepan over medium heat and stir the Velveeta constantly until completely melted and smooth, about 5–7 minutes.
Add the drained green chilies and stir well to combine.
Fold in the drained tomatoes gently, stirring until evenly distributed throughout the dip.
Transfer to a serving bowl and serve warm with tortilla chips, crackers, or fresh vegetables.
Comments
This is a genuinely quick weeknight dip that works for Charlotte because all three ingredients are stocked year-round at every major chain—Velveeta, canned green chilies, and canned tomatoes hit the shelf at Harris Teeter, Food Lion, Kroger, Walmart, and ALDI without fuss. The cost per serving lands around 50 cents per person, driven mostly by the Velveeta block, which is economical for dips. The stated fifteen minutes is honest for melting and stirring, and the dip reheats smoothly in a microwave or skillet, making it useful for a second meal or party. The real limitation is that this is a one-note queso that skews toward processed cheese flavor rather than depth, and it offers no fresh vegetables or protein to build a meal around—it's strictly an appetizer or side, not a household anchor.
