Ingredients
2 1/4 cups cake flour
2 1/4 teaspoons baking powder
4 tablespoons soft margarine
1 1/4 cups sugar
4 large eggs
1 teaspoon vanilla extract
1 tablespoon grated orange peel
3/4 cup skim milk
3 sprays cooking spray for pan
2 tablespoons skim milk
3 ounces low-fat cream cheese
6 tablespoons unsweetened cocoa powder
2 cups sifted confectioners sugar
1/2 teaspoon vanilla extract
Directions
Preheat the oven to 350°F. Coat a 9x13-inch cake pan with cooking spray.
In a small bowl, whisk together cake flour and baking powder until combined.
In a large mixing bowl, cream together the soft margarine and sugar until light and fluffy, about 2-3 minutes.
Add eggs one at a time to the margarine mixture, beating well after each addition to ensure they are fully incorporated.
Mix in 1 teaspoon vanilla extract and grated orange peel, stirring until evenly distributed.
Alternately add the flour mixture and skim milk to the batter in three additions, beginning and ending with the flour. Mix on low speed until just combined after each addition.
Pour the batter into the prepared cake pan and smooth the top.
Bake for 28-32 minutes, or until a toothpick inserted in the center comes out clean or with just a few moist crumbs. Do not overbake.
Remove the cake from the oven and allow it to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before frosting.
For the frosting, beat together the low-fat cream cheese and 2 tablespoons skim milk until smooth and creamy.
Sift the unsweetened cocoa powder and confectioners sugar together to remove any lumps.
Gradually add the cocoa-sugar mixture to the cream cheese mixture, beating until you achieve a smooth, spreadable consistency.
Stir in 1/2 teaspoon vanilla extract and mix until fully incorporated.
Once the cake has cooled completely, spread the frosting evenly over the top and sides using a spatula. Cut into 16 pieces and serve.
